About Us
As founders of Charis Creations, Krista and Monique both have Celiac Sprue Disease and Lactose Intolerance (Monique has an egg sensitivity as well). Our common allergies and our love of baking, creativity, and food led us to move forward with our business to help others in their search for great tasting gluten free foods!
"Charis" (pronounced "khar-iss") is the Greek word for Grace, which we thought was an appropriate name to use to represent what we stand for. Without God's Grace and Mercy, we would be lost and desolate. Instead, God has redeemed us through His Son, Jesus Christ, and has blessed us with the Gift of Salvation.
It is the mission of Charis Creations to share the gift of nourishment with those who are struggling with allergy sensitive diets. We know how hard it is showing up to a gathering and not being able to eat almost everything being served, or going out to a restaurant and finding it nerve-racking trying to order something off their menu.
Although we can not change what public establishments are offering on their menus, we can offer you tips of foods you CAN eat, and ideas of what to cook or bake within the comfort of your own home.

OUR FAITH
"And God said, 'Let the earth sprout vegetation, plants yielding seed, and fruit trees bearing fruit in which is their seed, each according to its kind, on the earth.' And it was so." ~Genesis 1:11
We believe that God created the heavens and the earth and everything in it. God also created vegetation and provided foods for us to eat.
With all the genetic modifications, processing and chemicals added and used in foods and production, it's no wonder our bodies are having so many reactions to it! The Lord told us how to till the land and commanded us that after 7 years we were to let the land rest. In order to keep up with the ever growing population and food needs all over the world, we have not held to God's plan. Monique and I believe we are feeling the effects of such things now in the way our bodies react to certain foods and in some of the diseases and ailments we experience.
Now, this is not to say that gluten sensitivity is a complete result of every single modification made to food, BUT we feel it does play a part. So, we've decided to take it back to basics and work on discovering ways of cooking and ingredients to use that will best fit the needs of our food allergy customers.

Only The Best For Our Customers
Due to the rise in use of artificial sweeteners such as Sucralose (Splenda), Aspartame (Nutra-Sweet/Equal)and Saccharin (Sweet'N Low), we can see that many people are looking for substitutes for their daily sugar intake. Studies show there is quite a bit of conflict around the use of artificial sweeteners with some arguing that such products may cause both short and long term health effects both in children and adults.
Below we have listed some good alternatives to satisfy one's sweet-tooth in place of White Sugar or Artificial Sweeteners:
- Honey
- Fruit concentrates
- Fruit toppings
- Agave nectar
- Cinnamon and
- Molasses.
When sugar is a must, raw sugars that are closest to their natural state are recommended. For diabetics, the no calorie sweetener stevia is a better alternative to artificial sweeteners. Stevia is naturally extracted from the Stevia rebaudiana plant.
At Charis Creations, we strive to keep our baked goods as healthy and good for the body as possible. That's why instead of always using Processed or Artificial Sweeteners in our products, we have chosen to use Organic Cane Sugar, Sucanat, Agave Nectar and other healthier sweetening agents as much as possible in the goodies we prepare. Consuming white sugar is not unhealthy when done so in moderation which is why we do not completely rule out using it.
Below is a brief description of one of the natural cane sugars we use:
Sucanat (a contraction of "Sugar Cane Natural") is non-refined cane sugar. Unlike refined and processed white sugar, Sucanat retains its molasses content; it is essentially pure dried sugar cane juice. The juice is extracted by mechanical processes, heated and cooled at which point the small brown grainy crystals are formed.
Of all major sugars derived from sugar cane, Sucanat (not a "processed" sugar) ranks the highest in nutritional value, containing a smaller proportion of sucrose than white cane sugar. Sucanat retains its full molasses content and flavor, thus making it, as stated above, pure dried cane juice.
